New DFAC options at Littlerock AFB

LITTLE ROCK AIR FORCE BASE, Ark. -- The Hercules Dining Facility Airmen have earned the Hennessy Award at the Air Mobility Command level three years running proving all dining facilities are not created equal.

The team will be evaluated at the Air Force level from Feb. 24 – Feb. 26, 2017 with the hopes of bringing home the award for Best Food Service Operation in the Air Force.

But, if you need another reason to dine there, the cooking concepts and equipment upgrades are quite appetizing.

Hercules Dining Facility is one of two bases throughout the Air Force with Super Sonic Subs, CIAO Pizza and Big City Grill. Each station has a menu board, that offers all new menu items added at each station.

The Super Sonic Subs, CIAO Pizza and Big City Grill, stations are prepared to appeal to the widest array of taste buds.

“With this new refresh and equipment upgrade, the Airmen have more options than a standard Food Transformation Initiative operation. The customers will be satisfied each time they choose to dine with us. We have a total of 7 stations that support multiple diets and religious practices”. said U.S. Air Force Tech. Sgt. Ayana Hodges, 19th Force Support Squadron DFAC manager. “These upgrades are initiated by industry standards and by the feedback we receive.”

The Super Sonic Subs station now offers freshly made bread made daily with 10 different meat options. This replaces frozen store-bought bread and slim pickings of fillings.  

“Each freshly made sub is made to order, Airmen fill out an order card selecting the type of sandwich they want to build,” said U.S. Air Force Tech Sgt. Danielle Joe, 19th Force Support Squadron, assistant DFAC manager. “This offers them more variety than what we had before.”

The CIAO pizza station would even satisfy the famously known pizza critics, (think Teenage Mutant Ninja Turtles), with a build-your-own 10 inch personal pizza. Pick your toppings of choice, within a minute your personal 10 in made-to-order pizza is ready to serve.

The Big City Grill is now sizzling, each sandwich and burger is assembled to order for each customer. New equipment and menu items have been added to enhance the speed of service, quality of products, freshness and integrity.

“We pride ourselves on freshness, variety, quality and presentation,” said Chef Todd Brazile, Aramark Regional Executive Chef.
